1 stick Earth Balance vegan buttery spread
1¼ teaspoons cinnamon
1 teaspoon vanilla
1½ cups teff flour
½ cup potato starch
¼ cup tapioca flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup sugar
2 eggs
1 12 oz. pkg. chocolate chips
1 cup finely chopped walnuts
1 teaspoon guar gum
Cream the Earth Balance and sugar.
Add the vanilla, eggs and baking powder.
Mix in the flour, salt, guar gum, and cinnamon.
Add the chocolate chips and walnuts.
Drop in teaspoon size onto cookie sheet.
Bake for 8 to 10 minutes at 350 degrees
