– 3/4 cup sweet rice flour
– 3/4 cup brown rice flour
– 1/3 cup millet flout
– 1/3 cup buckwheat flour
– 1 tbs teff
– 2 tbs brown sugar (optional)
– 1 tbs cinnamon (optional)
– 3/4 tbs blue agave
– 1/2 tbs baking soda
– 1 cup fixative (apple sauce, mashed banana, etc)
– flavorings (optional: peanut butter, Enjoy Life chocolate chips, shaved coconut, fruit compote, sliced almonds, prebaked meat or whatever you fancy)
Preheat oven to 375 degrees. Mix dry ingredients and then wet ingredients in bowl, stirring until consistent. Add water as required to form a sticky dough. Add toppings and remix. Dough should be able to stand without running. Spoon 1-1/2 tablespoon sized lumps on to ungreased cooking sheet. Bake for about 10 minutes and then check after every five until outside seems crisp and firm.
To be honest I don’t really measure things when I make these so go with your instincts if a measure seems too much or too little. These are tasty and quite versatile. They taste good with savory or sweet ingredients and go well with a number of drinks. My latest favorite in terms of flavorings is Enjoy Life chocolate chips, banana, almonds and coconut.
